VEGETABLE QUICHE
Comments OffAs I was looking for something to cook for dinner I came across a basic quiche recipe, while it seemed rather bland with just cheese I decided to jazz it up with some vegetables. The best part of this is that the crust is actually whole wheat so it also makes this meal healthy. This makes four large dinner servings.

INGREDIENTS
Crust:
1 cup whole wheat pastry flour
5 tbsp. cold butter
1/8 tsp. Salt
Filling:
2 whole eggs
3 egg whites
1/2 cup milk
1/2 cup sauted mushrooms
1 cup spinach (thawed and drained or fresh sauted)
1/3 cup cheese (your choice, I used a blend)
1/8 cup sauted onion
1/4 cup roasted red pepper
INSTRUCTIONS
Preheat oven to 350 degrees. For crust, cut butter into flour and salt and add enough cold water to make the dough stick together. Turn out on a floured board and roll out for a pie pan. Place in pie pan, trim edges.
For filling, wisk eggs, egg whites and milk together. Stir in remaining vegetables and cheese. Bake in 350 oven for 45 minutes or until knife inserted in center comes out clean. Let cool for five minutes before slicing. I served with a nice side salad.
