SMOKEY CHEESE BLACK BEAN AND RICE CASSEROLE

INGREDIENTS
1 red onion
1/2 red bell pepper, chopped
1 c Morning Star Vegetarian crumbles
1 can black bean, drained and rinsed
1 cup broccoli, chopped
1 1/2 cup mushrooms (baby portabellas)
1 can Cream of Celery soup
3/4 cup brown rice
1 1/2 cup shredded smoked swiss cheese
1 cup Italian cheese blend
1 tbsp. olive oil
1 tsp. morton natures seasoning
1 tsp. black pepper
INSTRUCTIONS
Preheat oven to 350 degrees. Cook brown rice according to package instructions and set aside.
Saute onion, pepper in olive oil for five minutes. Add crumbles and continue to saute util thawed. Add mushrooms, broccoli, season with pepper and natures seasoning. Stir and allow to simmer, till veggies are tender. Remove from heat.
Poor soup into rice, add 1/2 cup water and stir till rice is warm. Cover and let steam for 5 minutes.
Transfer rice mixture into large bowl and add vegetable mixture. Stir in black beans, smoked swiss, 1/2 cup of Italian cheese until mixed. Pour into prepared 9×13 pan and sprinkle with remaining cheese.
Cover casserole dish with foil and bake for 30 minutes. Remove foil and continue to bake for an additional 10 minutes or until cheese begins to brown. Serves 6
