MEMAW’S SALMON PATTIES
Comments OffI remember these fondly as a child being cooked up in my grandmother and mothers kitchen. It’s really the only way I eat salmon, I know its sad. My children and niece love them.
INGREDIENTS
1 lg. can salmon (skinless, boneless)
2 eggs
1 tbsp. prepared mustard
1/2 stack saltine crackers crushed
yellow cornmeal
Oil for frying
INSTRUCTIONS
Drain salmon and break apart in a medium bowl. Add the eggs, mustard and crackers. Still and let sit for 10 minutes. Make into patties and dredge in cornmeal till coated. Fry in heated oil until slightly brown on each side.
