COFFEE CAKE
Comments OffThis is a quick coffee cake to throw together for Sunday brunch or when the ladies come over for coffee. It has lots of that cinnamon crumb topping, which in my opinion is the best part.
INGREDIENTS
1 box yellow cake mix
2 sticks of cold salted butter
2 ¼ cups all purpose flour
1 ½ tablespoons cinnamon
1 ¾ cup sugar
1 ½ tbsp. vanilla
Powder sugar for dusting
INSTRUCTIONS
Preheat oven to 350.
Prepare cake mix in a bowl according to directions on the box. Spray the 9×13 pan with Pam spray. Pour batter into pan and bake for 15-20 minutes or until center is barely set.
While cake is baking, prepare crumb topping. I large bowl or electric mixer combine, butter, flour, cinnamon, sugar and vanilla until all crumbly.
Immediately after cake is removed from oven, break crumb topping into marble size pieces with fingers, sprinkling over top. Put back in oven and bake an additional 10-15 minutes (topping will begin to look les raw). Let cool fully then dust with powdered sugar.
Cut into squares.
